Well I do love The Only Living Boy In New York, and they do a nice version, but they had a little help there as it was written by Paul Simon. Simon & Garfunkel's version remains the definitive one I feel.
They also did I Don't Want To Talk About It which had been a hit for Rod Stewart in the 70s. But actually that was written by a little known man called Danny Whitten who used to play rhythm guitar in Neil Young's Crazy Horse. Again I'd say that the original Crazy Horse recording remains the definitive one.
Often, though not always, this is the case with cover versions. It's tough to beat the original version.
